Description

A comforting one-pot dish with tender chicken, caramelized onions, and creamy rice.


Ingredients

  • 2 boneless chicken breasts
  • 1 cup long-grain white rice
  • 2 large onions, thinly sliced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Gruyère cheese (optional)

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add onions and cook until caramelized (about 15 minutes). Remove onions and set aside.
  3. Season chicken with salt and pepper, then brown in the same skillet (5 minutes per side). Remove chicken.
  4. Add rice to the skillet and toast for 1 minute.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Return onions and chicken to the skillet. Cover and simmer for 20 minutes.
  7. Sprinkle with cheese (if using), then broil for 2 minutes until golden.

Notes

  • Use a wide skillet for even cooking.
  • Stir rice occasionally to prevent sticking.
  • Let rest for 5 minutes before serving.
