- 2 boneless chicken breasts
- 1 cup long-grain white rice
- 2 large onions, thinly sliced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Gruyère cheese (optional)
Instructions
- Heat butter and olive oil in a large skillet over medium heat.
- Add onions and cook until caramelized (about 15 minutes). Remove onions and set aside.
- Season chicken with salt and pepper, then brown in the same skillet (5 minutes per side). Remove chicken.
- Add rice to the skillet and toast for 1 minute.
- Pour in chicken broth and heavy cream, stirring to combine.
- Return onions and chicken to the skillet. Cover and simmer for 20 minutes.
- Sprinkle with cheese (if using), then broil for 2 minutes until golden.
Notes
- Use a wide skillet for even cooking.
- Stir rice occasionally to prevent sticking.
- Let rest for 5 minutes before serving.
