- 2 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts and zucchini slices in a baking dish.
- Drizzle with olive oil and sprinkle with oregano, garlic powder, paprika, salt, and pepper.
- Toss to coat evenly.
- Bake for 25-30 minutes until chicken is cooked through.
- Sprinkle with feta cheese and parsley before serving.
Notes
- For crispier zucchini, broil for the last 2-3 minutes.
- Substitute chicken thighs if preferred.
- Add cherry tomatoes for extra flavor.
